Introduction
Freshly harvested finfish contain a diverse natural microflora, whose levels may range from 2 to 7 log cfu/cm2 (Liston, 1980). Furthermore, the presence of large amounts of nonprotein nitrogen in fish tissue and the near-neutral pH (>6.0) make fish tissue an ideal medium for growth of bacteria (Gram & Huss, 1996). Shellfish contain similar groups of microorganisms but may also contain the microbial pathogens in the waters in which they grow, as molluscs are filter feeders and concentrate these within themselves.
Therefore, processing needs to include steps to reduce the microbial load on the surface of the fish and keep the surfaces that come in contact with fish clean to prevent cross-contamination. The use of chlorine based compounds in the fish and fishery product industry is mainly focused on the end point disinfection of the product contact and the non-product contact surfaces.
The application of Sodium Dichloro Isocyanurate (NaDCC), directly to the edible portions of fish and shellfish, useful to wash or rinse steps on whole fish and the dipping of fillets for pathogen reduction. It is effective against the viruses associated with foodborne disease, especially in shellfish. It is used in seafood processing sanitation applications.
Scientists have found that the human pathogen Aeromonas hydrophila, commonly isolated from sea foods, forms bio films on stainless sled within a three minute contact time. It was also observed that bio films increase with time at room temperature. Chlorine applied to infected stainless steel, inactivates the bio films. The effectiveness of chlorine on such bio films is greatest when it is applied soon after infection.

NaDCC has an extra property of causing hydrolysis of cell membrane peptide chain by hypochlorous acid, which disintegrates cell wall and the organism. That is how Ef Chlor not only reduces bacterial load but effectively removes residual proteins from the surfaces of utility areas, work area, boats and nets. Hence Ef Chlor imparts triple action of disinfecting, cleaning and deodorizing simultaneously.
